One of the world's oldest blue-veined cheeses, has its affinity with North Italian regions of Lombardy and Piedmont, and history that dated back to the 11th century in the town of Gorgonzola, Northeast of Milan. The cheesemaking process involves the priceless transformation by nature with the Penicillium roqueforti mold that gives the characteristic blue-green marbling. Made from unskimmed cow's milk, that offers a crumbly, creamy, soft texture with taste of nuttiness after months of aging to achieve ripeness. This cheese offers a sweet, buttery flavor, mild & milky, soft & creamy.

Ideal pairing with a soft Bordeaux Red, a California Zinfandel or sweet wines.
