Founded in 1892, the sake name Kawatsuru is named from river crane, from the time their founder saw a beautiful crane flutter down to the pristine waters of the Saita River.
This river is also knows as the Takarada River, as its water is seen as bringing treasures to the surrounding rice fields. From the spring water of this river, we brew sake with a powerful, refreshing taste.
Kawatsuru's aim is to be a true sake brewing group that protects the spirit of sake brewing, which has been passed down since the first generation. Kawatsuru not only excels in sake making but also rice cultivating as well.
Kawazuru's sake has a taste that spreads the flavor in a pleasant way, as it is packed with the full flavor of rice. Most of the rice used is locally grown rice such as Sanuki Yoimai and Oidemai.
Tasting Note:
Seasonal Sanuki peaches grown in the blessings of the sun in Setouchi, which are suitable for peach cultivation, are carefully ground and brewed while they are fresh.
Peach, which is rich in dietary fiber and contains potassium and catechin, goes well with nigori liquor, which contains a lot of amino acids.
The mellow peach flavor spreads quickly, and the sweetness and acidity of the peach are smooth and elegant. It is thick and refreshing.
