Made from pasteurized sheep's milk, this cheese is produced exclusively in the historical plateau Spanish region of La Mancha, under the strict quality guidelines of EU PDO designation system. The traditional use of grass mould gives the cheese its distinctive zigzag, herringbone basket weave pattern pressed on the rind. This firm cheese is being aged for 6 months, that displays fruity, nutty, caramel taste. on top of slight grassy notes. Tangy, firm and supple on the mouthfeel. This pairs very well with Spain's famous sherry or a good glass of Airen, Macabeo or Vedejo white wines.
