The Cloudscape wines come from specially selected vineyards in Elgin and Paarl which are influenced by the cooling effect of localised clouds. Each afternoon above the sunny hillsides, clouds form a protective blanket as hot air rises over the mountains and meets cooler Atlantic winds. the cool climate grapes thrive under such conditions which allow optimum sunlight during the day and cooler temperatures at night
The Cinsault grapes come from vineyards lying in the shadow of Paarl Mountain, where a deep underground aquifier is the only source of water for these old bush vines are harvested then gently crushed to extract all the flavor but retain delicate color. The resulting juicy textural primary juice is then racked partially to barrel, mostly to steel, for fermentation. After a blend off the two components is combined, the whole is racked to tank before being gently fined, filtered and bottled.
